Easy Fudge
Don’t let the list of supplies or number of steps stop you from making this simple and delicious fudge. This is a good recipe to take to a cook out or picnic. You may want to keep this chilled until your group is ready to eat or set it out after the meal for everyone to munch on as they watch the fireworks or splash around in the pool.
Supplies Needed:
| 1 (one) 7 oz jar of Kraft marshmallow creme | 1 large bowl | ||||||||
| 1 12 oz. bag of semi-sweet chocolate chips | 1 large spoon | ||||||||
| 1 tsp vanilla extract | 1 non-stick sauce pan | ||||||||
| 3 cups sugar | 1 spatula | ||||||||
| ¾ c. (1 ½ sticks) margarine | 1 13×9 pan | ||||||||
| 1 (one) 5 oz. can of evaporated milk | Aluminum foil | ||||||||
| 1 cup chopped nuts (optional) | Cooking spray | ||||||||
| Wax paper |
Step 1:
Line your 13 x 9 pan with aluminum foil and spray the pan with cooking spray. This makes cleanup easier and allows you to easily cut the fudge later. If you are taking these tasty bites to a bbq then why not buy a disposable 13X9 pan with a top.
Step 2:
In a large bowl, combine marshmallow crème, chocolate chips and vanilla. Add nuts, if you are using them. Combining these ingredients now simplifies the process of combining all the ingredients later on.
Step 3:
In your non-stick saucepan, combine the butter and milk on Medium heat. Cut your butter into chunks so that it will melt faster. Mix the melted butter and milk together and add your sugar. Using a flat headed spatula will help to make sure the mixture doesn’t stick to the bottom.
Step 4:
Once all three ingredients are combined mixture, stir constantly. You can stir round and round, in a figure 8 motion, however you prefer … just keep the spatula on the pan’s bottom at all times. Run your spatula along the sides of the pan as well so that the sugar doesn’t crystallize. If the sugar crystallizes it will cause little bits of sugar through the fudge and have a texture of sand.
Step 5:
Have a timer set to five minutes so that when the mixture has come to a full rolling boil you will just need to hit start.! You will want to boil the mixture for 5 minutes. You are looking to see that your mixture is at the soft ball stage. You can use a candy thermometer if needed. The more often you make Fantasy Fudge, the more you will be able to tell when it’s ready.
Step 6:
VERY carefully, pour your hot sugar, butter and milk mixture into the large bowl with the marshmallows creme, nuts, and chocolate chips. Quickly yet carefully stir all the ingredients together.
Step 7:
As you stir you will see your mixture come together into a thick cream – see picture in order to help you determine if your mixture is ready to pour into the pan.
Step 8:
Pour your fudge mixture into your prepared pan. Using the large spoon push the fudge into the corners of the pan. Be careful as you do this as the mixture is still hot and you don’t’ want to get burned. Cover your pan with foil and put into the refrigerator for it to set up.
Once the fudge has set you can easily pull it from the pan by lifting up the foil and lifting out the fantasy fudge.
You will want your pieces to be about 1″ in size. The easiest way to do this is to cut the fudge in half, then cut each half in half until you have your squares.
This fudge is very rich so you may want to cut it into even smaller pieces. But for the chocolate lover you will want a big piece.
If you are using a pre bought pan with cover just sit your foil with fudge back in the pan, cover with a sheet of wax paper, put on the container lid and off you go. Remember the fudge can stick together so make sure you put wax paper in between each layer of fudge as you pack it for transport.
Make sure your fudge is either covered with your containers lid or aluminum foil. Cover and put in the fridge until you are ready to eat.
